Unlimited leverage is not available to all traders by default. It is the highest available leverage setting for trading account types that support it, but on real accounts it only becomes selectable once specific equity, trading volume, and order-count conditions are met. It is intended for experienced traders, and is limited to a specific set of instruments (see restrictions table below).

Higher leverage increases risk, not just position size. Unlimited leverage allows for larger positions relative to account equity, which increases exposure to losses as well as gains. It should not be interpreted as a profit advantage, and is not suitable for all traders.
For demo trading accounts, the unlimited leverage option can be enabled at any time. However, it only actually applies while account equity is less than 5,000 USD (4,999.99 USD or less). If equity exceeds 5,000 USD, actual leverage automatically fluctuates and is limited according to standard equity ranges.
